Atlantis from Assassin's Creed: Odyssey is a very mountainous area. The buildings and mountains of the ancient city are much larger than on the map of the earlier areas.
In addition, Atlantis has many water reservoirs. The layout of this area makes it very difficult to move around on a mount.

Climbing
One of the most practical ways to move around the map is climbing. Your hero can get to any possible mountain or building. The only downside to this way of moving around the map is time. Overcoming some mountains takes a lot of time and effort.

Water reservoirs should be traveled by boat. In most water areas you will find at least one boat that can be used swim to the other side.
Wings of Hermes
It is a new means of transport that will enable you to quickly overcome large heights. It's something like an elevator. Wings of Hermes take you to the top of a mountain or to its bottom.
The Wings of Hermes are marked on the map. You don't have to unlock them, you just need to enter the right place and you will be transported right away.
Using Wings of Hermes causes the game to launch a special loading screen (it takes around 15 seconds).
